In keeping with the international flavour of the festival, we’ll be demonstrating, cooking, baking and serving delicious and unusual dishes from around the world,
On Saturday we’ll make Uttapam, a South Indian rice pancake served with spiced okra and coconut chutney, Khachapuri, a Georgian cheese bread served with Lobia, a bean & fenugreek stew and Bunnychow, a South African curry in a milk bun with fresh mango relish.
On Sunday we’ll make Borek, Turkish spinach and cheese pies served with pickled cabbage and harissa, Paratha stuffed with spiced potato served with pea & kale subzi and lime pickle, and Pletzels, onion topped flatbreads served with burnt aubergine salad and beetroot & horseradish paste
